Recipe: Tangy Pepper Salad

Tangy pepper salad: This sweet and tangy salad is chock full of peppers, garlic, green olive and basil leaves that have been marinated in a mixture of toasted cumin seeds, lime juice and honey. It’s the perfect addition to your next taco night.

Ingredients:
3 cups of thin strips of yellow and red bell peppers
2 tbsp of spring onions finely chopped
3 cloves of garlic finely chopped
2 tsp lime juice
2 tbsp of organic honey
2 tsp of green olives chopped
1 tsp coriander leaves chopped
1 tsp basil leaves chopped
Half tsp of ground roasted cumin seeds
Half tomato chopped in long strips.
Method 
In a large bowl mix together bell pepper, spring onion and chopped green olives and garlic
For dressing
Whisk cumin powder,  lime juice, honey and salt together.
Pour over the salad
Toss well
Top it with coriander and basil leaves
Serve fresh
Enjoy.
