Beetroot pumpkin delight is a humble veggie that is packed with multiple health benefits along with a delicious flavor and a vibrant deep colour.
Beetroot is low in calories. fights inflammation and is a good source of Potassium,Pumpkin or squash is a good source of Beta Carotene. Provides Vit C ,E and A..A good source of fiber . With parsley and seeds the nutrient value is further enhanced.
Garlic not only adds flavor but is an antioxidant. So the entire dish is light on the stomach yet filling and nutritious.
Enjoy the simplicity
1 cup of beetroot chopped semi boiled in square pieces,
1 cup of pumpkin (raw) chopped into square pieces
Half an onion lengthwise cut
3 cloves garlic finely chopped
2 tsp extra Virgin olive oil
2 tsp parsley finely chopped
Salt and white pepper .1/4th tsp each
1 tsp of pumpkin and sunflower seeds each
Take beetroot and pumpkin in a glass bowl
Add finely chopped garlic, onion, olive oil, parsley, salt and pepper. Give a good mix
Place the bowl in a preheated oven for 10 min
Check after 10min if soft with a fork
As the flavor seeps in once done, take it out from the oven .
Sprinkle pumpkin and sunflower seeds and lime.
As a dietitian my idea is to bring all kinds of vegetarian food on your plate which you can enjoy. Balance it with other combinations and relish it.
